Try a Strip of Vegan Eggplant “Bacon”

Eggplant Bacon

Spice up any vegan breakfast with delicious homemade eggplant bacon.

Prep Time 10 minutes Cook Time 50 minutes Total Time 1 hour Servings 8 people 

Ingredients

  •  1 eggplant medium
  •  2 tbsp soy sauce
  •  2 tbsp olive oil extra virgin
  •  1 tsp maple syrup
  •  1/2 tsp liquid smoke
  •  1/2 tsp smoked paprika
  •  black pepper

Instructions

  1. Preheat oven to 300 degrees.  Line 2 baking sheets with parchment paper.
  2. Cut the eggplants lengthwise, into quarters.  Then slice these pieces into long strips.
  3. In a bowl, mix paprika, liquid smoke, maple syrup, olive oil, and soy sauce until well combined.
  4. Put eggplant slices onto the baking sheets and coat both sides with sauce and top with black pepper.
  5. Bake for 45-50 minutes or until the eggplant cooks through and is crispy and golden brown.
