Eggplant Bacon
Spice up any vegan breakfast with delicious homemade eggplant bacon.

Ingredients
- 1 eggplant medium
- 2 tbsp soy sauce
- 2 tbsp olive oil extra virgin
- 1 tsp maple syrup
- 1/2 tsp liquid smoke
- 1/2 tsp smoked paprika
- black pepper
Instructions
- Preheat oven to 300 degrees. Line 2 baking sheets with parchment paper.
- Cut the eggplants lengthwise, into quarters. Then slice these pieces into long strips.
- In a bowl, mix paprika, liquid smoke, maple syrup, olive oil, and soy sauce until well combined.
- Put eggplant slices onto the baking sheets and coat both sides with sauce and top with black pepper.
- Bake for 45-50 minutes or until the eggplant cooks through and is crispy and golden brown.
