Tasty Classic Pancakes

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk or milk with a squeeze of lemon
  • 1 large egg
  • 2 tablespoons melted butter plus more for the pan
  • Maple syrup berries, or a dusting of powdered sugar for serving

Method
 

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, and melted butter until smooth.
  3. Gently combine the wet and dry ingredients. Do not overmix, a few small lumps keep the pancakes fluffy.
  4. Heat a non-stick pan over medium heat and brush lightly with butter.
  5. Pour ¼ cup of batter for each pancake. Cook until bubbles appear on top and the edges look set, then flip and cook until golden.
  6. Stack them high, add your favorite toppings, and enjoy slowly with coffee or tea.
