Sweet Potato Pie

Ingredients
  

For the filling:
  • 2 cups mashed sweet potatoes about 2 large potatoes
  • ½ cup butter softened
  • ¾ cup brown sugar
  • ½ cup milk or cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
For the crust:
  • 1 unbaked 9-inch pie crust store-bought or homemade

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Pierce the sweet potatoes with a fork and bake or boil until tender. Peel and mash until smooth.
  3. In a large bowl, combine mashed sweet potatoes and butter. Mix until creamy.
  4. Add sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt. Beat until fully blended.
  5. Pour the mixture into the unbaked pie crust and smooth the top.
  6. Bake for 50 to 55 minutes, or until the center is set and a knife inserted comes out clean.
  7. Cool completely before slicing.
