Cinnamon Spice Cookies

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • Optional: extra cinnamon sugar for rolling

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the butter and both sugars until creamy. Add the egg, vanilla, and milk, and mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir just until combined. The dough should be soft but not sticky.
  5. If desired, roll each scoop of dough in cinnamon sugar for extra flavor and crunch.
  6. Place tablespoon-sized portions on the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10 to 12 minutes, or until the edges turn golden.
  8. Let them cool on the sheet for a few minutes before transferring to a wire rack.
