Butterscotch Pudding

Ingredients
  

  • 1 half cup brown sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons cornstarch
  • 2 cups milk
  • 1 half teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Place a saucepan over medium heat and add the brown sugar and butter.
  2. Stir gently until the sugar melts and the mixture looks smooth and glossy.
  3. In a bowl, mix the cornstarch with a few tablespoons of milk until smooth.
  4. Add the remaining milk and salt to the saucepan, stirring slowly.
  5. Pour in the cornstarch mixture and continue stirring until the pudding thickens.
  6. Lower the heat and cook for another 2 to 3 minutes while stirring.
  7. Remove from heat and stir in the vanilla extract.
  8. Pour the pudding into serving bowls and let it cool slightly.
  9. Chill in the refrigerator until set, then serve.
