Sometimes the best dinners are the ones you make just for yourself. This vegan squash and herb pizza is the kind of meal that feels indulgent but still wholesome. It’s earthy, fragrant, and full of fall flavor, perfect for a quiet evening when you want something cozy without too much effort.

Squash & Herb Pizza

Ingredients
  

  • 1 small flatbread or mini pizza crust
  • ½ cup roasted squash butternut or acorn work beautifully
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • A few fresh sage leaves chopped
  • ½ teaspoon thyme leaves
  • ¼ cup vegan mozzarella or cashew cheese
  • 1 tablespoon caramelized onions optional but delicious
  • Salt and pepper to taste
  • A handful of arugula for topping

Method
 

  1. Preheat your oven to 400°F (200°C). If using raw squash, roast small cubes in olive oil, salt, and pepper for about 20 minutes until soft and golden.
  2. Brush your flatbread or crust lightly with olive oil. Sprinkle the minced garlic over it for a bit of flavor.
  3. Mash or layer the roasted squash evenly on the crust. Add the herbs, caramelized onions if using, and a generous handful of vegan cheese.
  4. Bake for 8–10 minutes until the edges are crisp and the cheese melts slightly.
  5. Remove from the oven, top with fresh arugula, and finish with a drizzle of olive oil or a sprinkle of flaky salt.
