Cheddar and broccoli soup is the kind of meal that feels like home. It’s creamy, full of flavor, and surprisingly easy to make on a busy day. With just a few simple ingredients, you can create a bowl of comfort that tastes like it’s been simmering for hours.

Cheddar & Broccoli Soup

Ingredients
  

  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 cups broccoli florets chopped small
  • 2 cups chicken or vegetable broth
  • 1 cup milk or cream
  • cups shredded cheddar cheese
  • 1 tablespoon flour
  • Salt and black pepper to taste

Method
 

  1. In a large pot, melt the butter over medium heat. Add the onion and cook until soft and translucent. Stir in the garlic and cook for another 30 seconds.
  2. Sprinkle the flour over the onions and stir until smooth. Slowly pour in the broth while whisking to prevent lumps.
  3. Add the chopped broccoli and let the soup simmer for about 10 minutes, or until the broccoli is tender.
  4. Lower the heat and stir in the milk. Add the cheddar cheese gradually, stirring until melted and creamy.
  5. Season with salt and black pepper. For a smoother texture, blend part of the soup, then stir it back in for a mix of creamy and chunky.
