Focaccia is the kind of bread that makes your kitchen smell like heaven. It’s golden, crisp on the outside, soft on the inside, and beautifully simple to make. With olive oil, herbs, and a few patient steps, you can bake a loaf that feels straight out of an Italian bakery.
Method
- In a large bowl, mix the warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
- Add the flour, salt, and 2 tablespoons of olive oil. Stir until a sticky dough forms.
- Transfer the dough to a floured surface and knead gently for about 5 minutes until smooth and elastic.
- Lightly oil a clean bowl, place the dough inside, and cover it with a damp towel. Let it rise for 1 hour in a warm spot until it doubles in size.
- Punch the dough down and transfer it to a greased baking pan. Stretch it out with your fingers to fit the pan, then let it rise again for 20 minutes.
- Preheat the oven to 400°F (200°C). Before baking, use your fingertips to press small dimples into the dough. Drizzle olive oil over the top and sprinkle with sea salt and herbs.
- Bake for 20 to 25 minutes until golden brown.
- Let it cool slightly before slicing, and brush with a final drizzle of olive oil for a glossy finish.
Notes
Focaccia is best served warm, torn by hand, and shared at the table. You can pair it with soups, salads, or simply dip it in olive oil and balsamic vinegar. It’s rustic, satisfying, and far easier to make than it looks.
