Gingerbread Cookies

Ingredients
  

  • 3 cups all purpose flour
  • 3 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 half teaspoon salt
  • 3 quarter cup unsalted butter softened
  • 3 quarter cup brown sugar
  • 1 large egg
  • 1 half cup molasses
  • 1 teaspoon vanilla extract

Method
 

  1. Whisk the flour, ginger, cinnamon, nutmeg, baking soda and salt in a bowl.
  2. In another bowl, beat the butter and brown sugar until smooth, then add the egg, molasses and vanilla.
  3. Add the dry mixture to the wet mixture and stir until a soft dough forms.
  4. Wrap the dough and chill it for about 30 minutes.
  5. Heat the oven to 350°F (175°C).
  6. Roll the dough on a lightly floured surface and cut shapes with cookie cutters.
  7. Place the cookies on a baking sheet lined with parchment.
  8. Bake for 8 to 10 minutes and let them cool on a rack.
