Method
- Whisk the flour, ginger, cinnamon, nutmeg, baking soda and salt in a bowl.
- In another bowl, beat the butter and brown sugar until smooth, then add the egg, molasses and vanilla.
- Add the dry mixture to the wet mixture and stir until a soft dough forms.
- Wrap the dough and chill it for about 30 minutes.
- Heat the oven to 350°F (175°C).
- Roll the dough on a lightly floured surface and cut shapes with cookie cutters.
- Place the cookies on a baking sheet lined with parchment.
- Bake for 8 to 10 minutes and let them cool on a rack.
